Try posting in the Facebook Rutan Longez and Varieze public group. Whoever does it would need to have access to your airplane to match-drill the wing to your centerspar. Frankly if I were you I'd order some cores from Eureka and do it myself. I suppose you could make an accurate template on the centerspar that you could transfer to the new wing for match-drilling the bolt holes. I suppose it's possible but I don't know who has done it. Normally the match-drilling is done from the front-face of the centerspar before the fuel tanks are built with the wings temporarily bondoed to the centerspar. It doesn't sound EZ.
